Which tier does a small restaurant fall under?
It depends on annual turnover and on whether the business operates in more than one state. Most single-outlet restaurants sit in the state licence tier rather than basic registration, but the boundary is a turnover figure that is confirmed against the current rule before the application is filed.
What happens if the licence lapses?
Operating with an expired licence is treated the same as operating without one, and it attracts a penalty on inspection. Renewal has to be applied for before expiry; once the licence has lapsed, a fresh application is generally required rather than a renewal, which is slower.
