Why does the merchant need audio at all?
Because at a busy counter nobody looks at a screen. The speaker announcing the amount is what lets the merchant hand over goods without stopping to check a phone, and it is also what stops a customer showing a screenshot of an old payment.
Does it need the merchant's Wi-Fi?
No. 4G is built in, which matters because merchant Wi-Fi is the single most common reason a counter device stops working. Battery lasts multiple days and charges over standard USB-C.
